Table for Ten Culinary Event

Chef Pascal Olhats, “It’s the best culinary event in Orange County that shouldn’t be missed. The excitement of all these chefs cooking together but preparing their dishes – all under one roof – is incredible. It’s exciting for me each year because I get to work all year on creating my special menu.”

“I love the chance to cook for the guests and create fun dishes that show off your talent,” Executive Chef Rob Wilson of the Ritz-Carlton says. “Interaction with the guests is fun. I always try to get the table involved. I tell them to make some noise. I write a menu every year for the event, and I always throw in an extra course. I’ll start with amuse bouche and a Champagne toast. We also serve trios of artisan goat cheeses and bread throughout the dinner. Because I am with the Ritz-Carlton, I try to keep it elegant and simple, which includes bringing in a Thermal circulator for sous vide cooking.”

The whole setup is very attractive and fun- as opposed to one big ballroom with the same food for everyone.” Executive Chef Jean Pierre Dubray of The Resort at Pelican Hill says.  I enjoy this event very much and am planning to bring a line-up of dishes which will include scallops, squab with potato gnocchi, and a lobster-stuffed beef tenderloin – a dish I reserve for special occasions like this. A room full of chefs is the entertainment. It’s like having 30 chef’s tables.”

Chef Adam Navidi of Oceans and Earth says, “It’s a cool and exciting event. We get to choose our spotlight introduction song which is always entertaining. The event is all about the chefs. This is the one time of the year when we get to hang out and do something exciting for a really good cause.”

Chef Marcel St. Pierre of Steakhouse 55, Disneyland Resort states, “I have been doing this event year after year, and each time, I have the best time. I look forward to participating because we have so much fun. The event highlights the chefs and the benefiting charity is such a nice way. It’s simple, creative and smooth.”

Chef David Fune of Splashes, Surf & Sands Resort says, “We have a lot of fun designing our table, menu, and wines. We always surprise our guests with additional treats, specialty drinks, and table favors. We try to “win” our guests over.”
